India covers a vast area of the southern region of Asia surrounded by seven neighbours: Pakistan in the northwest, China and Nepal in the north, Bhutan and Bangladesh in the north-east, Myanmar in the east and Sri Lanka, an island, in the south. The capital of India is New Delhi. It is the seventh largest country in the world by area.

India is the largest democracy in the world by population bound by the Indian Ocean in the south, the Arabian Sea on the west and Bay of Bengal in the east. It gets its name from the Greek word, Indus meaning "the people who live near the Indus River.

The staple foods of Indian cuisine is millet, rice, whole-wheat flour and a variety of lentils, such as lentils, pigeon peas, black gram and mung beans. Lentils is used whole, dehusked or split. Split lentils, or dal, are used extensively. Legumes such as chickpeas, kidney beans, and black-eyed peas are also part of their diet.

Many Indian dishes are cooked in vegetable oil, peanut oil, mustard oil, sunflower oil, soybean oils and coconut oil. Hydrogenated vegetable oil called ghee is often used as a cooking medium. Curries made from chicken, mutton, fish and beef are consumed in India. Lentils is probbly the most consumed dish in the country.
